What You’ll Need
- 1 cup gluten-free flour mix
- 1/2 cup cocoa powder (we love mixing in cacao for extra richness!)
- 1 tsp baking soda
- 1/4 tsp Himalayan salt
- 1 cup organic brown sugar
- 1 1/2 tsp pure vanilla extract
- 1/2 cup almond milk
- 1/2 cup softened butter
- 1 egg
- 3/4 cup hot coffee
How to Make It
- Preheat oven to 350°F and lightly spray your cake pans with olive oil spray.
- Cream together butter, brown sugar, egg, almond milk, and vanilla until smooth.
- In a separate bowl, whisk flour, cocoa, baking soda, and salt until well combined.
- Slowly mix the dry ingredients into the wet ingredients.
- Stir in the hot coffee until the batter is fully combined (don’t worry if it looks a bit thin—this is what makes it so moist!).
- Bake for 30–35 minutes, or until a toothpick comes out clean.
